Ingredients

  • 2 lb pork shoulder, thinly sliced
  • 2 tbsp achiote paste
  • 1/4 cup pineapple juice
  • 2 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 1 cup fresh pineapple chunks
  • 12 corn tortillas
  • 1 onion, diced
  • 1/2 cup fresh cilantro
  • 2 limes, cut into wedges

Instructions

  1. Marinate pork: In a bowl, mix achiote paste, pineapple juice, garlic, chili powder, cumin, and oregano. Add pork and marinate for at least 2 hours or overnight.
  2. Cook pork: Heat a grill or large skillet over medium-high heat. Cook pork slices until charred and cooked through, about 4-5 minutes per side.
  3. Grill pineapple: Grill pineapple chunks until caramelized, about 2-3 minutes per side.
  4. Warm tortillas: Warm corn tortillas on the grill or in a dry skillet until soft and pliable.
  5. Assemble tacos: Layer sliced pork on tortillas, top with grilled pineapple, diced onion, and cilantro.
  6. Serve: Serve immediately with lime wedges for squeezing.
