Japanese Ramen

Ingredients

  • 4 servings ramen noodles
  • 2 lb pork belly or shoulder
  • 6 cups pork broth
  • 4 eggs
  • 4 green onions, sliced
  • Nori sheets
  • 2 tbsp soy sauce
  • 2 tbsp miso paste
  • 1 tbsp sesame oil
  • 1 tbsp ginger, minced
  • 2 cloves garlic, minced
  • Chili oil (optional)

Instructions

  1. Prepare pork: Season pork belly with salt and pepper. Sear in a hot pan until golden brown on all sides. Set aside.
  2. Make broth: In a large pot, combine pork broth, ginger, garlic, soy sauce, and miso. Bring to a simmer.
  3. Cook pork: Add seared pork to the broth and simmer for 1 hour until tender. Remove and slice.
  4. Boil eggs: Meanwhile, boil eggs for 6-7 minutes for soft-boiled. Cool in ice water, peel, and halve.
  5. Cook noodles: Cook ramen noodles according to package instructions. Drain and divide into bowls.
  6. Assemble: Ladle hot broth over noodles. Top with sliced pork, egg halves, green onions, nori, and a drizzle of sesame oil.
  7. Serve: Add chili oil if desired and serve immediately.
